Mashed Potatoes and Crispy Onion.
Sear-roast 200 grams of clean, washed, salted pork
tenderloin sprinkled with pepper on all sides on a grill
pan, wrap it in Tyrolean bacon laid out on tin foil, and
put it in an oven preheated to 180°C to roast for ten
minutes. Take the tenderloin out of the tin foil, cut it
crosswise (check if it is still pink in the centre), and place
it on mashed potatoes with onions and bacon fried
brown. Serve the dish with crispy Viennese onions and
a homemade demi glace.
